Spring TUNA Salad

Ingredients

  • 3-4 mini cucumbers, cut into sticks

  • 8-10 radishes, cut into sticks

  • 5-6 cherry tomatoes, quartered

  • 3 green onions, sliced

  • 2 cup iceberg salad

  • 1 small tuna tin in water

  • 3 Tbsp. extra-virgin olive oil

  • 2 Tbsp. fresh lemon juice

  • 2 tsp. apple cider vinegar

  • 1 garlic clove, pressed

  • kosher salt and fresh black pepper, to taste

Instructions

In a salad bowl, combine the cucumbers, radishes, tomatoes, green onions, iceberg and tuna. You can also add the tomatoes at the end if you want them to hold their shape better.

In a separate bowl, whisk together the olive oil, lemon juice, apple cider vinegar, and garlic. Season with salt and pepper, to taste.

Pour the vinaigrette over the salad and toss to combine. Serve immediately.
